Breakfast Rolls:
- 1 recipe of pizza dough: See http://chezlittley.blogspot.com/2011/02/homemade-pizza.html
- Cut the dough and roll into balls about 1-2 inches in diameter.
- Flour dough ball generously and roll out very thin. Your dough should look like a mini pizza shell.
- Place your favorite scrambled eggs in the middle of the dough.
- Gather the ends of the dough and pinch to form a ball.
- Lay rolls seam side down on a cookie sheet lined with parchment.
- Brush with egg wash.
- Bake at 500 degrees for 10 minutes.
- When done, transfer to cooling rack and pop the entire rack into the freezer.
- When frozen, bag, label and stick in the freezer.
- From the freezer, microwave on high for 60-90 seconds (depending on your microwave).

- Cut the dough and roll into balls about 2-3 inches in diameter.
- Flour dough ball generously and roll out very thin.
- Your dough should look like a mini pizza shell; Spread on as much pizza sauce as you like but too much will make the calzone difficult to handle.
- Add your favorite pizza toppings on half of the pie.
- Fold dough over creating a half-moon shape.
- Roll up the seams and press with a fork to seal.
- Brush with egg wash.
- Bake at 500 degrees for 12-15 minutes until golden brown.
- When done, transfer to cooling rack and pop the entire rack into the freezer.
- When frozen, bag, label and stick in the freezer for a quick meal on the run.
- From the freezer, microwave on high for 90-120 seconds (depending on your microwave).
